Who needs takeout, when it’s so easy to recreate the flavor of the Orient in your own home.
40 minutes preparation plus rising and cooling, 25 minutes baking
Makes 20 buns
1 package active dry yeast
1 tablespoon granulated sugar
1 cup warm milk (105-115F)
2 tablespoons warm water (105-115F)
3 cups all-purpose flour
½ teaspoon salt
Filling
2 tablespoons soy sauce
1 teaspoon granulated sugar
2 tablespoons vegetable oil
2 large cloves garlic, chopped
1 green onion, chopped
8 ounces ground pork
1 small eggplant, peeled, chopped, and cooked (2 cups)
1 tablespoon dark sesame oil
1 ½ teaspoons red pepper flakes
Glaze and Topping
1 large egg, lightly beaten
Sesame seeds
1.In a large bowl, dissolve yeast and sugar in warm milk and warm water. Let stand until foamy, 5 to 10 minutes.
2.Mix together flour and salt. Using a heavy-duty electric mixer fitted with the paddle attachment and set on low speed, beat flour mixture, ½ cup at a time, into yeast mixture until a stiff dough forms.
3.On a floured surface, knead dough until smooth and elastic, 5 to 10 minutes, adding more flour to prevent sticking.
4.Place dough in a large greased bowl, turning to coat. Cover loosely with a damp cloth; let rise in a warm place until doubled, 2 hours.
5.To prepare filling, mix together soy sauce and sugar. In a large skillet, heat vegetable oil over medium heat. Add garlic and green onion. Cook, stirring frequently, for 30 seconds.
6.Add pork; cook, stirring frequently, until no longer pink, 3 minutes. Stir in eggplant, soy sauce mixture, sesame oil, and red pepper flakes. Remove from heat. Cool to room temperature.
7.Grease 2 baking sheets. Punch down dough. On a floured surface, knead dough until smooth and elastic, 5 minutes.
8.Roll dough into a long rope; cut into 20 equal pieces. Using a floured rolling pin, roll each dough piece into a 5-inch circle, leaving middle thicker than edges. Spoon 2 tablespoons of filling into center of each circle. Gather dough over filling; pinch seams to seal.
9.Place rolls, seam-sides down, 2 inches apart, on prepared baking sheets.
10.Cover loosely with a damp cloth; let rise in a warm place until doubled, 20 to 45 minutes.
11.Preheat oven to 350F. Brush rolls with glaze. Sprinkle with sesame seeds. Bake until golden, 25 minutes. Transfer rolls to wire racks to cool slightly.
