Gingerbread

2 ½ cups flour
1 cup brown sugar
1 cup boiling water
1 cup molasses
¾ cup melted butter
2 eggs
3 teaspoons ground ginger
1 teaspoon mixed spice
1 teaspoon cinnamon
1 teaspoon baking soda

Grease or line with parchment paper, The Bottom ONLY of a 9" X 5" loaf pan.

Cream eggs and sugar. Add melted butter, then molasses. Combine flour, baking soda, cinnamon, mixed spice and ginger and add to mixture. Lastly add boiling water.

Bake 1 hour in a moderate oven, 350F or until knife inserted in gingerbread comes out clean. Test for doneness at 45 minutes.
