Fritter Batter

A Very Good Fritter Batter

2 Ozs. flour
4 tablespoons water or milk
1 tablespoon oil
1 egg white or ½ teaspoon baking powder
Pinch of salt

Sift flour and gradually beat in oil and water, cover and set aside for 20 to 30 minutes. Whisk egg white until still enough to stand in a point and fold it lightly into the batter.

Use for fish or fruit batters. If baking soda or baking powder is used in place of egg, use 2 extra tablespoon of water and do not add the baking powder until after the mixture has stood.
