3 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon ground ginger
½ teaspoon allspice
One 1-oz. glass New Sugar (wet sugar)
Just sufficient water to blend sugar into a thick syrup
2 tablespoons melted butter

A substitute may be made for New Sugar using 10 ozs. very dark brown sugar and proceeding with just sufficient water to make a thick syrup as above.
Sieve all dry ingredients together, make a well in centre of same and pour the thick syrup into this well, add melted butter and blend all together lightly. Turn out on well floured board and pat with your hands to a thickness of ¼ inch or a wee bit thicker. Cut into circles, using an ordinary drinking glass for this purpose. Raise bullas with a well floured spatula and place on a slightly greased and well floured Patty Making Tin. Bake at 400F for roughly 20 minutes.
