Easter Spiced Bun
1 yeast cake
1 whole nutmeg grated
1 egg
1 ½ pints of milk, scalded
½ lb. butter
1 cup brown sugar
4 cups flour
1 cup water
1 teaspoon salt
¼ lb. crystallized cherries, chopped
¼ lb. raisins, chopped
¼ lb. citron, chopped
¼ lb. citron (chopped)
1 teaspoon cinnamon
Pinch of mixed spice
Dissolve yeast in small amount of lukewarm water.
Scald milk and boil the cup of water. Combine liquids.
Place butter, sugar, salt and spice in a bowl and pour milk and water over same. Beat egg and add to same the liquid mixture.
Sieve half the flour into the liquid and stir well, then stir in yeast and all fruit. Add sufficient or remaining flour to make a stiff dough. Cover and let rise until double in bulk.
Knead, then sprinkle in rest of flour and again knead well. Shape into loaves and let rise again until double in bulk.
Bake in greased loaf tins at 350F until Bun leaves sides of tins and springy to touch.
