Lemon Cream Cheese Cookies

15 minutes preparation, 10 minutes baking per batch
Makes 3 dozen cookies
½ cup (1 stick) butter, softened
1 package (3 ounces) cream cheese, softened
1 cup granulated sugar
1 tablespoon milk
1 teaspoon lemon extract
1 cup all-purpose flour
½ cup yellow cornmeal
¾ cup dark raisins
1. Preheat oven to 350F. Grease 2 baking sheets.
2. Beat together butter and cream cheese at medium speed until smooth. Beat in sugar, milk and lemon extract. At low speed, beat in flour and cornmeal, ½ cup at a time, until blended. Stir in raisins.
3. Drop dough by tablespoonfuls onto prepared baking sheets, 2 inches apart. Using a fork dipped in water flatted each cookie slightly.
4. Bake cookies until set and golden, 10 minutes. Transfer baking sheets to wire racks to cool slightly. Transfer cookies to racks to cool completely.
Baking Tips
If desired, replace the raising with other dried fruit, such as chopped apricots, dates or prunes.
