Cookies Recipes

Ginger-Walnut Cookies

15 minutes preparation, 15 minutes baking per batch

Makes 2 dozen cookies

1 ½ cups all-purpose flour
1 teaspoon ground ginger
½ teaspoon baking soda
1/8 teaspoon salt
2/3 cup butter, softened
2/3 cup firmly packed brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups chopped walnuts (6 ounces)

1. Preheat oven to 350F. Grease a 15 x 10-inch jelly roll pan.

2. Mix together flour, ginger, baking soda and salt.

3. Beat together butter, brown sugar and granulated sugar at medium speed until light and fluffy. Beat in egg and vanilla.

4. At low speed, beat in flour mixture, ½ cup at a time, until soft dough forms. Stir in nuts.

5. Spread dough in prepared pan; smooth top.

6. Bake cookies until golden, 15 minutes. Transfer pan to a wire rack to cool slightly.

7. Turn cookies out onto a cutting board. Cut into wedges while still warm. Transfer cookies to a rack to cool completely.

Baking Tips
If you prefer crispier cookies, bake them for an additional 2 to 3 minutes.
