Frosted Honey-Carrot Cookies
|
30 minutes preparation plus cooling, 10-12 minutes baking per batch
Makes 6 dozen cookies
1 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon baking soda
1/8 teaspoon salt
¾ cup (1 ½ sticks) butter, softened
¼ cup firmly packed light brown sugar
½ cup honey, at room temperature
½ teaspoon vanilla extract
2 large eggs
1 large carrot, peeled and shredded
Frosting
4 ounces cream cheese, softened
½ cup (1 stick) butter, softened
½ teaspoon vanilla extract
2 ¼ cups confectioners’ sugar
Garnish
Marzipan carrots
1. Preheat oven to 350F. Grease 2 baking sheets.
2. Mix together flour, baking powder, cinnamon, baking soda and salt.
3. Beat together butter and brown sugar at medium speed until light and fluffy. Beat in honey and vanilla. Add eggs, 1 at a time, beating well after each addition. At low speed, beat flour mixture into egg mixture. Stir in carrot.
4. Drop batter by rounded teaspoonfuls onto prepared baking sheets, 2 inches apart.
5. Bake cookies until golden and set, 10 to 12 minutes. Transfer baking sheets to wire racks to cool slightly. Transfer cookies to racks to cool completely.
6. To prepare frosting beat cream cheese and butter at medium speed until smooth. Beat in vanilla. At low speed, gradually beat in confectioners’ sugar until smooth.
7. Spread frosting over cookies. Garnish with marzipan carrots.
