Cookies Recipes

Chinese Almond Cookies

15 minutes preparation, 10 minutes baking per batch

Makes 3 ½ dozen cookies

2 cups all-purpose flour
½ teaspoon baking powder
½ cup (1 stick) butter, softened
½ cup solid vegetable shortening
1 cup granulated sugar
1 large egg yolk
1 teaspoon almond extract

1. Preheat oven to 350F. Grease 2 baking sheets.

2. Mix together flour and baking powder.

3. Beat together butter and shortening at medium speed until smooth. Beat in sugar until light and fluffy. Beat in egg yolk and almond extract. At low speed, beat flour mixture into egg mixture until blended.

4. Shape dough into 2-inch ovals. Place cookies, 2 inches apart, on prepared baking sheets. Using the bottom of a glass, flatten each cookie slightly.

5. Bake cookies until golden, 10 minutes.

6. Transfer baking sheets to wire racks to cool slightly. Transfer cookies to racks to cool completely.

Baking Tips
Be careful not to overbake these cookies. Flavor and appearance are at their best when cookies are kept to a light golden color.
