Cookies Recipes
15 minutes preparation, 15 minutes baking
Makes 2 dozen squares
1 ½ cups all-purpose flour
1 ½ cups old-fashioned rolled oats
1 cup firmly packed light brown sugar
½ teaspoon baking soda
½ teaspoon salt
¾ cup (1 ½ sticks) butter, melted
Frosting
8 ounces semisweet chocolate, cut into small pieces
¼ cup heavy cream
1. Preheat oven to 350F. Grease a 13 x 9-inch baking pan.
2. Mix together flour, oats, brown sugar, baking soda and salt.
3. Pour melted butter over flour mixture; stir until well combined. Spread oat mixture in prepared pan. Pat into an even layer.
4. Bake until lightly browned, 15 minutes. Transfer pan to a wire rack to cool completely.
5. Meanwhile, prepare frosting. In top of a double boiler set over simmering (not boiling) water, melt chocolate. Stir in heavy cream. Spread frosting over cooled oat mixture.
6. Chill until chocolate is set, 30 minutes. Cut into 2-inch squares.
Baking Tips
For delicious variations, sprinkle chopped nuts or toasted coconut over bars while frosting is still soft. Substitute milk or bittersweet chocolate for semisweet chocolate in frosting.
