Pastry Recipes
30 minutes preparation, 25-30 minutes baking
Makes 9 pastries
1 sheet frozen puff pastry, thawed according to package directions
¼ cup granulated sugar
2 tablespoons cornstarch
2 tablespoons dry bread crumbs
1 ¾ cups fresh berries (such as strawberries or blueberries)
Glaze and Garnish
1 large egg
1 tablespoon water
Confectioners’ sugar
1. Preheat oven to 400F.
2. Mix together sugar, cornstarch, and bread crumbs. Sprinkle over berries; toss and coat.
3. On a floured surface, unfold pastry. Cute into 9 equal squares. Using a floured rolling pin, roll each piece into a 6-inch square.
4. Spoon 3 tablespoons of berry mixture into the center of each square. Mix together egg and water; brush corners of squares with egg mixture. Lift toward center; pinch to seal. Place pastries on an ungreased baking sheet. Brush with remaining egg.
5. Bake pastries for 10 minutes. Reduce temperature to 350F. Bake until golden brown, 15 to 20 minutes more. Transfer baking sheet to a wire rack to cool for 5 minutes. Transfer pastries to rack to cool. Sprinkle with confectioners’ sugar.
Baking Tip
If berries are very juicy, line baking sheet with parchment paper for easy cleanup.
