Chicago Deep-Dish Pizza


 
40 minutes preparation plus rising, 30 minutes baking

1 package active dry yeast
2 teaspoons granulated sugar
2 ½ cups warm water (105° - 115°F)
2 teaspoons salt
2 teaspoons dried oregano
5 ½ - 6 cups all-purpose flour

Topping
2 tablespoons olive oil
1 large clove garlic, chopped
1 medium white onion, thinly sliced
1 medium red onion, thinly sliced
1 cup prepared tomato sauce
2 cups shredded mozzarella cheese (about 8 ounces)
¼ cup chopped fresh basil, parsley, and thyme or 2 tablespoons mixed dried herbs
6 medium plum tomatoes, sliced
2/3 cup grated Parmesan cheese
10 anchovy fillets
10 black olives
1 teaspoon dried oregano

Garnish
Fresh basil leaves

1) In a large bowl, dissolve yeast and sugar in warm water. Let stand until foamy, 5 to 10 minutes.

2) Stir salt and oregano into yeast mixture. At low speed, beat in flour, ½ cup at a time, until a soft dough forms.

3) On a floured surface, knead dough until smooth and elastic, 5 to 10 minutes, adding more flour to prevent sticking.

4) Place dough in a large greased bowl, turning to coat. Cover loosely with a damp cloth; let rise in a warm place until doubled, 45 minutes.

5) Grease two 8-inch round cake pans.

6) Punch dough; divide in half. Pat each dough half into bottom and up sides of prepared pans. Fold edges under.

7) Preheat oven to 425°F.

8) To prepare topping, in a large skillet, heat oil over medium heat. Add garlic; cook for 30 seconds. Add white onion and red onion; cook, stirring frequently, until softened, 4 minutes. Transfer onion mixture to paper towels to drain.

9) Spoon tomato sauce into each prepared crust. Sprinkle with mozzarella cheese and half of herbs. Arrange tomatoes on top. Spoon onions over; sprinkle with Parmesan cheese and remaining herbs. Arrange anchovies and olives on top. Sprinkle crust with oregano.

10) Bake pizzas until crust is crisp and topping bubbles, 30 minutes. Transfer pans to wire racks to cool slightly. Garnish each pizza with a basil leaf.

Makes 2 pizzas

Baking Tips
Any topping is suitable for this recipe. Use different cheeses, herbs, cooked sausage or ground meat, or chopped, cooked chicken or shellfish.
