Boston Watercress Salad
|
Makes 8 servings
1 large head Boston lettuce
1 bunch watercress
2 medium oranges, peeled & sliced
1 medium avocado, sliced
Honey Caraway Salad Dressing (follows recipe)
About 20 minutes before serving:
Into a large bowl, tear lettuce and watercress into bite size pieces. Add oranges and avocado; gently toss with dressing until well coated.
Honey Caraway Salad Dressing
¾ cup mayonnaise
2 tablespoons honey
1 tablespoon lemon juice
1 tablespoon caraway seeds
In a small bowl with a wire whisk or fork, stir in all ingredients until blended; cover and refrigerate. Stir before using. Makes about 1 cup.
